Job Summary:
We are seeking a highly skilled and creative Sushi Specialty Chef to lead the sushi kitchen in our luxury 5-star hotel in Egypt. The ideal candidate will bring authentic Japanese culinary techniques, artistic presentation, and innovative menu development to provide a refined sushi experience that exceeds guest expectations.

Key Responsibilities:

Prepare and present high-quality sushi dishes, including nigiri, sashimi, maki, and specialty rolls.
Ensure the highest standards of hygiene, freshness, and presentation in every dish.
Develop and regularly update sushi menus based on seasonal ingredients and guest preferences.
Supervise and train kitchen staff in sushi preparation techniques and safety standards.
Maintain quality control for all ingredients, ensuring proper storage, handling, and traceability.
Collaborate with the Executive Chef on kitchen coordination, event planning, and cross-menu integration.
Monitor food costs, minimize waste, and ensure efficient kitchen operations.
Stay current with global sushi and Japanese cuisine trends to innovate and enhance guest experiences.
Cater to special dietary needs (gluten-free, vegan, allergen-friendly options).
Qualifications:

Minimum 5 years of experience as a Sushi Chef in a luxury hotel, high-end restaurant, or fine dining establishment.
Mastery of traditional and modern sushi techniques, including knife skills, rice preparation, and plating.
Deep knowledge of Japanese cuisine, ingredients, and cultural standards.
Strong leadership, communication, and kitchen management skills.
High attention to detail, creativity, and consistency.
Knowledge of HACCP standards and safe food handling practices.
English fluency; Arabic is a plus.
Preferred:

Experience in Michelin-starred or Japanese fine dining restaurants.
Certification in Japanese cuisine or culinary arts.
Experience in luxury hotel operations or international hospitality.
